Soul Tacos

About the Recipe
Sophia calls these soul tacos because of the way she sears the pork. Originally from LaChapelle, France. Her father was from Ghana. He migrated to France in 1959.
Ingredients
- 8 pork chops
- 1 chopped bell pepper
- 1 chopped red onion
- 3 tbsp of vegetable oil
- 1 garlic clove
- Cilantro (optional)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp cumin
Directions
- Season pork chops with salt, cumin, black pepper (and whatever else you like)
- Heat a stainless steel or cast-iron pan over high heat. Add 3 tablespoons of oil and allow to heat.
- Place the pork chops in a pan and sear on each side.
- Cook on low-medium temperature stove top for 20 minutes or until the meat is tender.
- Shred seared pork from the bone. Pour fat off the pork.
- Sear the vegetables in another pan by themselves. Once cooked, combine all the ingredients.
- Add your store-bought choice of green chile enchilada sauce.
- Dress the tacos with lettuce, tomatoes, onions, cilantro, and whatever else you like.
