Chicken Tinga

About the Recipe
My mom is from Mexico, and this is a dish sheʹs been cooking for our family for years. Tinga means “to tear” which is why the chicken is shredded. The name Tinga is derived from the Nahuatl word “tingatl.”
Ingredients
- 3 chicken breasts
- 1 tablespoon salt
- 2 tomatoes
- 1 garlic clove
- 1 white or yellow onion, sliced
- 3 chipotle peppers
- ½ cup boiling water
- 1 tablespoon cooking oil
Directions
- Fill a large pot halfway with water. Add the chicken and salt and boil until chicken is fully cooked.
- Blend tomatoes, garlic, onion, chipotle peppers, half a cup of boiling water.
- Drain chicken, once it cools, begin to shred chicken and remove all bones.
- Add cooking oil to pot on medium heat, add sliced onions, shredded chicken and pour in the blended sauce.
- Let all ingredients simmer and cook for 10 to 15 minutes covered on low heat.
