Carne de Res Guisado

About the Recipe
This recipe is Carne Guisado Guatemalteco. Although she wasn't taught how to make this recipe directly, Maria remembers watching her mom cook this recipe all her life. This recipe is delicious with white fried rice, sliced lettuce, cucumber, and tomato.
Ingredients
- 2 pounds of beef (carne de res)
- 8 tomatoes
- 1 white onion
- 3 garlic cloves
- 1 large red bell pepper
- 2 large russet potatoes
- 3 bay leaves
- 1 teaspoon dry thyme
- ½ cup white vinegar
- 1 teaspoon black pepper
- 2 tablespoons salt
- 2 to 3 tablespoons of oil
Directions
- Mince the tomato, onion, and garlic. Chop the potato and set aside for later use.
- Add about 2 tablespoons of oil to a deep frying pan and sauté meat for 10 to 15 minutes on medium heat. Make sure to flip the meat at least once to ensure it is cooked.
- Add all the minced items to the frying pan with the fried meat.
- Add the rest of the ingredients except for the potato. Add 2 to 4 cups of water, the ingredients should be fully covered by the water. Add salt to taste.
- Bring the contents to a boil then turn the heat down to low.
- Add potato and keep the contents cooking at a simmer for 1 hour.
- The meat is ready when it is tender. The water should have been reduced into a nice sauce. Serve and enjoy.
