Lasagna Soup

About the Recipe
My grandma would make my mom lasagna soup in the winter. This winter 2023, my mom made it for me and It’s now my favorite food.
Ingredients
- 1 pound Italian sausage
- 1 medium onion, diced
- 3 tablespoons of tomato paste
- 3 garlic cloves, diced
- 4 cups of beef broth
- 24 ounces of pasta sauce
- 14.5-ounce can of petite diced tomatoes
- 2 tablespoons Italian seasoning
- 1 tablespoon salt
- 1½ tablespoons sugar
- ¼ tablespoon black pepper
- 8 ounces lasagna noodles
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup parmesan cheese
Directions
- Place a large soup pot over medium-high heat. Add Italian sausage and diced onions. Break up the sausage in the pot and cook for about six minutes or until sausage is brown and onion is translucent.
- Add tomato paste and garlic. Stir and cook for one minute.
- Add beef broth, pasta sauce, diced tomatoes, Italian seasoning, salt, sugar, ¼ tablespoon black pepper, stir well and bring liquid to a simmer.
- Add 8 ounces of lasagna noodles stir and let pasta cook for about 12 minutes while pasta cooks. Add one cup of ricotta cheese, one cup, shredded mozzarella, and half cup of Parmesan cheese.
- Serve in a bowl with a topping of mixed cheeses (optional).
